CONTEXT & ENVIRONMENT
Our client is an international operator in the Oil & Gas sector, managing offshore facilities in Cabo Delgado, Mozambique. As part of its offshore catering team expansion, the client is seeking experienced Cook profiles for long-term rotation assignments. The role requires a strong commitment to food safety, operational standards, and the ability to perform in a remote offshore environment.
MAIN RESPONSIBILITIES
Meal Preparation & Service
Prepare and cook meals for all rotations (breakfast, lunch, dinner, night snack)
Ensure compliance with HACCP and food safety standards at all times
Support menu planning in coordination with the Head Chef
Stock & Hygiene Management
Manage food stock, monitor expiry dates, and minimise waste
Maintain cleanliness and hygiene of galley equipment and work areas
HSE & Compliance
Comply with all offshore HSE procedures and participate in emergency drills
Report any food safety or hygiene incidents to the Catering Supervisor
CANDIDATE PROFILE

Education |
Vocational qualification in culinary arts or equivalent. |
|
Experience |
Minimum 3 years' experience as a Cook, preferably in an offshore or marine catering environment. Offshore experience is strongly preferred. |
|
Certifications |
BOSIET certificate — preferable / mandatory. |
|
Technical Skills |
Knowledge of HACCP and food safety regulations. Ability to manage galley operations during full rotation cycles. |
|
Languages |
English (working level). Portuguese |
|
Qualities |
Reliable, physically fit, team player. Ability to work in a multicultural environment under rotation schedule. |

CONTEXTO E ENQUADRAMENTO
O nosso cliente é um operador internacional do sector de Oil & Gas, com instalações offshore em Cabo Delgado, Moçambique. No âmbito da expansão da sua equipa de catering offshore, o cliente procura perfis experientes de Cozinheiro para missões de rotação de longa duração. A função exige forte comprometimento com as normas de segurança alimentar e capacidade de desempenho em ambiente offshore remoto.
PRINCIPAIS RESPONSABILIDADES
Preparação e Serviço de Refeições
Preparar e confecionar refeições para todas as rotações (pequeno-almoço, almoço, jantar, lanche noturno)
Garantir o cumprimento das normas HACCP e de segurança alimentar em todos os momentos
Apoiar o planeamento de ementas em coordenação com o Chefe de Cozinha
Gestão de Stocks e Higiene
Gerir o stock alimentar, controlar os prazos de validade e minimizar o desperdício
Manter a limpeza e higiene dos equipamentos e áreas de trabalho da cozinha
HSE e Conformidade
Cumprir todos os procedimentos HSE offshore e participar em exercícios de emergência
Reportar qualquer incidente de segurança alimentar ou higiene ao Supervisor de Catering
PERFIL DO CANDIDATO

Formação |
Formação profissional em artes culinárias ou equivalente. |
|
Experiência |
Mínimo 3 anos de experiência como Cozinheiro, preferencialmente em ambiente offshore ou catering marítimo. Experiência offshore fortemente valorizada. |
|
Certificações |
Certificado BOSIET — preferível / obrigatório. |
|
Competências Técnicas |
Conhecimento das normas HACCP e regulamentos de segurança alimentar. Capacidade de gerir operações de cozinha durante ciclos completos de rotação. |
|
Línguas |
Português (nativo ou fluente). Inglês (nível funcional) é uma vantagem. |
|
Qualidades |
Fiável, boa condição física, espírito de equipa. Capacidade de trabalhar em ambiente multicultural em regime de rotação. |

Rotação offshore de longa duração. Base na região de Pemba. |
